Paul Flynn is an acclaimed Irish chef, restaurateur, and culinary educator, renowned for his modern approach to Irish cuisine.
He is the chef-owner of The Tannery Restaurant, The Tannery Townhouse, and The Tannery Cookery School in Dungarvan, County Waterford, which he co-founded with his wife, Máire, in 1997.
Paul’s cooking is characterised by its simplicity and depth of flavour, focusing on fresh, seasonal Irish ingredients. His menus are known for their understated elegance and bold tastes. A significant figure in the Irish culinary scene, Paul is celebrated for his dedication to modern Irish cooking and his contributions to culinary education.
An accomplished author, Paul has written several cookbooks, including An Irish Adventure with Food, Second Helpings, Surf and Turf (co-authored with Martin Shanahan), and Butter Boy, which compiles his popular food columns from The Irish Times.
Joining Paul on stage will be a beer specialist will join Paul to guide attendees through the thoughtful pairing of Paul’s food with the unique flavour profiles of Smithwick’s brews, an experience that highlights the harmony between Irish cuisine and craft beer.
