JR travels the world for two months out of every year, gathering inspiration for his craft as one of the most talented pastry chefs in Ireland.
With experience at prestigious establishments such as The River Cafe, Ottolenghi, Chez Panisse, and Tartine Bakery, his accolades include the Trolley of the Year award at the World Restaurant Awards in Paris in 2019 and Pastry Chef of the Year at the Food and Wine Awards in 2022. At Ballymaloe House, he showcases his mastery of desserts, publishing his debut cookbook, “Ballymaloe Desserts,” in 2022.
